Ingredients

  • 2 cups mixed berries fresh or frozen (I used ½ cup each of strawberries, blueberries, blackberries and raspberries)
  • ½ cup raw honey
  • 2 tablespoons fresh lemon juice

Instructions

  • In a medium saucepan, combine the berries, honey and 1 cup (240 ml) of water. Simmer over medium heat, stirring frequently, until the honey dissolves, about 4–5 minutes.
  • Transfer the mixture to a blender, add the lemon juice and blend until smooth.
  • Strain the purée through a fine-mesh sieve to remove seeds and any coarse bits.
  • Let the mixture cool to room temperature, then refrigerate for at least 2 hours or overnight so it chills completely.
  • Pour the chilled mixture into an ice cream maker and churn following the manufacturer’s instructions until it reaches a sorbet consistency.
  • For a firmer texture, transfer the sorbet to a container and freeze until set.
