Updated November 13th, 2019: Casse Noisette is temporarily closed but will reopen this month as Cédric Grolet’s new bakery-patisserie.
One of our recent favorite discoveries in Paris was Casse Noisette on Avenue de l’Opéra. The pastry selection, crafted by chef pâtissier Jeffrey Cagnes, left us genuinely impressed. The shop window alone is irresistible—walking past feels like a true food-moment and makes you want to step inside right away.
Once you enter, expect to be tempted by many choices. On our first visit we managed to resist and only bought two pastries, although the display makes it tempting to try several. The creativity and attention to detail at Casse Noisette stand out in a crowded Paris pastry scene.
6 Must-Try Pastries at Casse Noisette Paris
Jeffrey Cagnes is the creative force behind Casse Noisette’s desserts. His work blends classic techniques with playful twists. The shop’s signature is the “cannelé surprise,” presented in two versions that are both imaginative and delicious.
Gold Cannelé Surprise

The Gold Cannelé Surprise combines the traditional caramelized shell of a cannelé with a carefully composed interior—an elegant take on a classic French pastry. Textures and flavors contrast in a pleasing way, making it a standout choice for anyone visiting the shop.

Bronze Cannelé Surprise

On another visit I picked up two of the surprise cannelés as a small treat for Hugo, who composes music and plays guitar on Sunday afternoons. Those quiet hours are my chance to write, discover new food spots, or listen to podcasts. If you have podcast recommendations, I’d love to hear them. A few I enjoy include Big Magic by Elizabeth Gilbert and Quantum Living by Jess Lively.
Lemon meringue éclair

The lemon meringue éclair offers a fresh, tart lemon cream balanced by a light, toasted meringue topping. The choux pastry is delicate and not overly sweet, letting the citrus flavor shine—an excellent choice if you prefer bright, clean flavors.
Tarte Tatin revisitée

On a visit with my mother for her birthday, we shared a couple of pastries from Casse Noisette. The revisited Tarte Tatin is a modern take on the classic upside-down caramelized apple tart—refined, balanced, and perfect for sharing on a sunny Parisian afternoon.
Raspberry vanilla tart on a palet Breton base

This tart pairs fragrant vanilla cream with bright raspberries on a crisp palet Breton base. The contrast of the buttery, slightly crumbly base with the smooth filling and fresh fruit makes it a delightful, well-balanced pastry.
Decadent caramel éclair

The caramel éclair is rich without being heavy. A smooth caramel cream fills a perfectly baked choux, and the glaze adds a glossy finish. It’s a satisfying option for anyone who enjoys classic French pastry executed with precision.
