Today I’m sharing a simple method for slow-roasted candied tomatoes that are tender, sweet, and far more delicate than tough sun-dried varieties. These soft, caramelized tomatoes are delicious on antipasto platters, as a quick snack, or as a flavorful addition to chicken and fish dishes.

How to Make Slow-Roasted Candied Tomatoes

Ingredients
- 9 Italian plum tomatoes sliced lengthwise with core removed
- 1/4 cup Extra virgin olive oil
- Coarse ground Celtic sea salt
- Dried oregano
Instructions

Preheat the oven to 325°F (163°C).

Line a baking sheet with parchment paper.

Arrange the tomato halves cut side up on the prepared sheet.

Drizzle with olive oil.

Sprinkle lightly with coarse salt and dried oregano.

Roast for about 2 hours, until the tomatoes are very soft and edges are slightly caramelized. Remove from the oven and let cool.

Layer the cooled tomatoes in a jar and cover them with olive oil for storage.
