Have some love to spare? These bundles are begging for it.

Do you remember those strawberry lemonade cupcakes I made a while back — the ones I didn’t treat with much affection? The cupcakes I wasn’t all that into? On the same day those cupcakes came out of my kitchen, I also made these.
Some days in the kitchen everything goes right. Breads rise, cupcakes fluff, and chicken browns perfectly. Other days, cakes sink, garlic bread burns, steaks get rubbery and the broccoli ends up forgotten in the crisper.
That day must have been one of those odd in-between days. Still, I baked, I ate — a lot — and I walked six miles, which gave me the worst blisters I’ve ever had. I consoled myself with ice cream and watched Father of the Bride. Twice. Oh, and I ate bacon. How can a day with bacon be dull?
A reader named Laura sent this recipe weeks ago. For some reason she thought it would be right up my alley — bacon, butter, brown sugar and green beans. I tried it, loved it, and tweaked it slightly: fresher green beans, a touch less butter, and a bit more broiling time to crisp the bacon.

The result is irresistible: think green bean fries crossed with crispy bacon and a brown sugar–garlic glaze. Yes, they might look a little like spiders at first glance, but don’t let that stop you. They’re addictively good.

Ingredients
- 1 pound fresh green beans
- 10-12 slices thick-cut bacon
- 2 tablespoons butter
- 1 tablespoon brown sugar
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
-
Preheat the oven to 400°F (200°C). Lightly spray a 9 x 13-inch baking dish with non-stick spray.
-
Wash and thoroughly dry the green beans, then season them with salt and pepper. Gather about 5–8 beans per bundle, depending on bean thickness and your preference. Wrap a slice of bacon around the center of each bundle to secure it, and place the bundles seam-side down in the prepared baking dish. Repeat until all the beans are bundled.
-
In a small saucepan over low heat, melt the butter with the brown sugar and minced garlic, whisking until combined. Brush the mixture over each green bean bundle. Cover the dish with foil and bake for 35 minutes. Remove the foil and continue baking for another 10–15 minutes, or until the bacon is crisp to your liking.
