This Smoked Turkey Pot Pie is a longtime favorite, adapted here to highlight smoked turkey and a flaky crust. I smoked my turkey the day before, which added a wonderful depth of flavor to this comforting classic. Turning comfort foods into smoked versions has become one of my favorite ways to cook.

I used a Pit Boss Pro 1100 as my smoker, which works great as an oven when you want to introduce smoke to comfort dishes. If you don’t have a pellet smoker, this recipe adapts easily to a conventional oven with excellent results.
Smoked Turkey Pot Pie Recipe Ingredients:
- Cooked Turkey – Use shredded white or dark meat, about 1 pound of smoked turkey works well.
- Pie Crust – Two store-bought or homemade crusts: one for the bottom and one for the top. If you use a cast-iron pie plate, you can omit the bottom crust and use a single crust on top.
- Frozen Peas and Carrots
- Cream of Chicken soup (or substitute cream of mushroom, cream of celery, or cream of potato)
- Cream of Potato (optional swap)
- Egg – for an egg wash to glaze the crust
- Garlic Salt and Black Pepper – to taste

How To Make Smoked Turkey Pot Pie:
Prepare your smoked turkey first and shred it into bite-sized pieces. This recipe is ideal for using Thanksgiving or leftover smoked turkey.
Preheat and prepare your pie dish. Grease a pie plate and lay one pie crust in the bottom. If you use a glass dish, be aware it may pick up some smoke color when cooked on the smoker. For cast-iron pie plates, you can skip the bottom crust and only use a top crust.
Beat the egg in a small bowl to make an egg wash. Use a pastry brush to coat the inside of the bottom crust before adding the filling; you can also brush the top crust before baking for a golden finish.
In a mixing bowl combine the shredded smoked turkey (about 1 lb), frozen peas and carrots, one can of cream of chicken (or your chosen cream soup), and seasoning with garlic salt and black pepper. Stir until evenly mixed.

Pour the filling into the prepared bottom crust. Lay the second pie crust over the filling, crimp the edges to seal, and cut several slits in the top crust to vent steam. Brush the top crust with the egg wash.

To bake in the oven: preheat to 350°F and bake for 45–60 minutes. For a deeper golden crust, increase the temperature to 390°F for the final 15–25 minutes, watching carefully so the crust doesn’t burn.
To cook on a pellet smoker: cold-smoke on a low smoke setting if desired for about an hour, then increase the smoker to 350°F and bake until the crust is golden and the filling is bubbly. Rotate the pie during cooking if your smoker has hot spots, and check pellets to avoid any gaps in fuel. Mesquite or fruit-blend pellets both pair nicely with turkey.
When the pie is cooked through and the crust is golden, remove from the heat and let rest for a few minutes before slicing. Serve warm.
