This simple three-ingredient berry sorbet delivers the perfect balance of sweet and tart, and it’s especially easy to make while berries are in season.
With fresh or frozen mixed berries, raw honey and a little lemon juice, you can make a vibrant, naturally sweet sorbet in just a few steps. It’s light, refreshing and ideal for serving after a summer meal or whenever you need a cool pick-me-up.

Ingredients
- 2 cups mixed berries fresh or frozen (I used ½ cup each of strawberries, blueberries, blackberries and raspberries)
- ½ cup raw honey
- 2 tablespoons fresh lemon juice

In a medium saucepan, combine the berries, honey and 1 cup (240 ml) of water. Simmer over medium heat, stirring frequently, until the honey dissolves, about 4–5 minutes.

Transfer the mixture to a blender, add the lemon juice and blend until smooth.

Strain the purée through a fine-mesh sieve to remove seeds and any coarse bits.

Let the mixture cool to room temperature, then refrigerate for at least 2 hours or overnight so it chills completely.

Pour the chilled mixture into an ice cream maker and churn following the manufacturer’s instructions until it reaches a sorbet consistency.

For a firmer texture, transfer the sorbet to a container and freeze until set.
