Ingredients

  • 1/4 cup whole wheat pastry flour, or gluten-free baking mix to make gluten-free
  • 1 tablespoon coconut sugar, or sweetener of choice to taste
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground dried ginger
  • pinch ground allspice
  • pinch ground cloves
  • 2 tablespoons unsweetened nondairy milkplus
  • 2 teaspoons unsweetened nondairy milk
  • 2 tablespoons grated carrot
  • 2 tablespoons chopped walnuts
  • 1 tablespoon raisins, or chopped dates
  • 2 teaspoons mild oil, or use mashed banana or applesauce to make oil-free

Instructions

  • Oil an oven-safe mug (or use a single-serving nonstick pan to avoid added oil).
  • In the mug, combine the flour, sugar, baking powder, cinnamon, ginger, allspice and a pinch of salt; mix well with a fork so the baking powder is evenly distributed.
  • Add the nondairy milk, grated carrot, walnuts, raisins and oil (or oil substitute) and mix until combined.
  • Bake in the air fryer at 350°F (about 175°C) for 15 minutes. Test the center with a fork; if it needs more time, bake an additional 5 minutes.

Notes

For a simple topping, whip 1 tablespoon vegan cream cheese with 1 tablespoon powdered sugar for a creamy icing.
