Add a bright, flavorful vegetable side to your meal rotation with this Lemon Garlic Roasted Green Beans with Almonds recipe. Easy to prepare and full of zesty flavor, it elevates simple green beans into a standout side dish.
Keep the nutrients
Roasting green beans in the oven preserves their color and nutrients better than boiling, since vitamins and minerals aren’t lost to cooking water. Roasting also concentrates flavor and gives a pleasant tender-crisp bite.

Trimming the beans
To trim, line up the beans and cut off only the stem ends (the tougher part). Keep the thin tapered tips — they’re tender and perfectly edible.
How to make garlic green beans
In a large bowl, combine olive oil, minced garlic, sliced almonds, lemon juice and lemon zest. Add trimmed green beans and toss well to coat. Spread the beans on a rimmed baking sheet lined with foil, parchment, or a silicone mat for easy cleanup. Arrange thin lemon slices over the beans for extra flavor while roasting.

How long does it take to cook fresh green beans?
Preheat your oven to 400°F and position the rack in the middle. Roast the green beans until they begin to brown and crisp at the edges — about 15 to 25 minutes, depending on your oven and how tender you like them. Stir them once or twice during roasting for even browning. When done, remove from the oven, season with sea salt and freshly ground black pepper to taste, and serve warm.
Enjoy!
