I prefer offering a filling, nutrient-rich snack over a low-calorie alternative that provides little sustenance and leaves children hungry again soon after.

Using dates and prunes gives these bites natural sweetness without adding refined sugar or artificial sweeteners. These dried fruits release energy more slowly than simple sugars, helping to avoid rapid spikes and crashes in blood sugar and keeping little tummies satisfied for longer.

Description
Packed with nutritious ingredients including prunes, dates, nuts and flaxseed, these Raw Chocolate Brownie Bites are a tasty, portable snack for children and adults. They’re naturally sweet, high in fibre and simple to make.
Ingredients

- 125g / 1 cup pitted prunes
- 125g / 1 cup pitted dates
- 110g / 1 cup mixed nuts
- 25g / ¼ cup sunflower seeds
- 2 tbsp ground flaxseed
- 2 tbsp unsweetened cocoa powder
- 1 tsp vanilla extract
- 1 tbsp shredded coconut
Instructions
- Soak the prunes and dates in a bowl of warm water for 10 minutes to soften them. Drain but reserve the soaking water.
- Place the mixed nuts and sunflower seeds in a food processor and pulse until they form a coarse crumb.
- Add the drained prunes and dates to the processor and blend until combined. If the mixture stalls, add a tablespoon of the reserved soaking water at a time to help it along.
- Add the ground flaxseed, cocoa powder and vanilla extract, then pulse until evenly mixed.
- Press the mixture into a lined 8 x 8 inch (20 x 20 cm) dish. Cover and freeze for about 1 hour to firm up.
- Sprinkle shredded coconut on top, then cut into 16 small bites.
- Store the brownie bites in an airtight container in the fridge for up to 5 days.
