What is the RPL Recipe Club?
Each month I choose one Rainbow Plant Life recipe for the RPL community to make. You can cook along just for fun, or you can enter to win a special prize each month — details below.
How to participate:
Participating is simple. Follow these steps:
- Subscribe to the Rainbow Plant Life newsletter. Only newsletter subscribers are eligible to win the monthly prize (you may still participate without subscribing).
- Make this month’s recipe, photograph it, and email your photo to [email protected] with the subject line “Recipe Club” by 11:59pm on September 29th. Emailing your photo enters you in the monthly prize drawing.
At the end of the month we’ll randomly select a winner and share our favorite photos here.

September 2023 Recipe: Quinoa Salad!
Bring new life to your summer picnics and weekday lunches with this Quinoa Salad — one of my pleasant surprises this year. Although I wasn’t always a quinoa fan, this version won me over with its layered flavors and varied textures.
Unlike the boring quinoa salads you might have tried, this recipe celebrates toasted quinoa, marinated chickpeas, and seasonal vegetables for a satisfying, textural dish. It’s easy to adapt: use whatever produce is best at your market. Late-summer favorites include tomatoes, grilled corn or zucchini, or roasted eggplant. If it’s warming up toward fall, swap in winter squash or roasted carrots.
