  • 1 (15 oz) can pumpkin puree
  • 1/2 cup water
  • (Optional) 1 teaspoon pumpkin pie spice or a blend of cinnamon, nutmeg, and ginger

Combine the cake mix, pumpkin puree, and water in a bowl. Stir until just combined—do not overmix. Spoon the batter into lined or greased muffin cups, filling about two-thirds full. Bake in a preheated 350°F (175°C) oven for 20–22 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Allow the muffins to cool for a few minutes in the pan, then transfer to a wire rack to finish cooling.
