Ingredients

  • 6 (8 inch) soft flour tortillas
  • 8 oz softened cream cheese
  • 2 Tablespoons sour cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 cup diced fresh strawberries (about 4–5 oz)
  • 2/3–3/4 cup fresh or frozen blueberries (about 3 oz)
  • 2 Tablespoons unsalted butter, melted
  • 1/2 cup sugar
  • 2 teaspoons cinnamon

For serving:

  • About 2.5 oz white chocolate or white chocolate chips, melted
  • Fresh strawberries, sliced
  • Fresh blueberries

Instructions

  1. Place the oven rack in the center position and preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
  2. In a shallow bowl, combine the cinnamon and 1/2 cup sugar; set aside.
  3. In a bowl, beat together softened cream cheese, powdered sugar, sour cream and vanilla until smooth.
  4. Fold in the diced strawberries and blueberries.
  5. Divide the filling evenly among the 6 tortillas. Spoon the filling onto the lower third of each tortilla, fold in the sides and roll tightly like a burrito, placing the seam side down. Secure with toothpicks if desired.
  6. Brush each chimichanga with melted butter, then roll in the cinnamon-sugar mixture to coat. Arrange on the prepared baking sheet.
  7. Bake 8–10 minutes, until light golden and crispy. Watch closely after 6–8 minutes to prevent burning.
  8. Drizzle with melted white chocolate and garnish with fresh berries before serving.
