- 1/2 cup coconut oil, melted
- 1 1/2 cup light brown sugar
- 2 large eggs
- 2 tablespoons milk
- 1 1/2 teaspoons vanilla
- 1 teaspoon kosher salt
- 1 teaspoon baking soda
- 1 3/4 cups all-purpose flour
- 2 3/4 cups old-fashioned rolled oats
- 1/2 cup flaked unsweetened coconut
- 3/4 cup chocolate chips
- 3/4 cup raisins
Instructions
- Preheat the oven to 350°F (175°C).
- Line a 9×13-inch baking dish with foil or parchment and spray lightly with cooking spray.
- In a large bowl, whisk melted coconut oil, brown sugar, eggs, milk and vanilla until smooth.
- Add salt, baking soda, flour and oats; mix until just combined.
