Even if you don’t follow a gluten-free diet, you likely know someone who does. More people are choosing to remove gluten from their meals, and grocery stores and restaurants are responding. Today it’s easy to find gluten-free pasta, flours, frozen meals, and baked goods in both specialty and mainstream stores.
I discovered almond flour for this crust at Trader Joe’s and was surprised by the price: $3.99 for a 16-ounce bag — an excellent value. If Trader Joe’s isn’t nearby, almond flour (also called almond meal) is available at many supermarkets and online retailers. Almond flour ranges in color from golden to a darker shade like the one shown in the photos.
Interestingly, this gluten-free pie crust (which can also be made vegan, paleo, and sugar-free) was adapted from a recipe I used for Healthy Girl Scout Cookie Tagalongs. It’s versatile and pairs well with countless pie fillings — I have many pie recipes and plan to share another soon.
