Ingredients

Ginger-Mint Syrup:

  • 1/2 cup granulated sugar
  • 6 slices fresh ginger
  • 2 sprigs mint

Cooler:

  • 1 cup coconut water
  • 1/4 cup ginger-mint syrup
  • 1/4 cup Chardonnay (optional)
  • Ginger, sliced for garnish
  • Mint for garnish

Instructions

To make the ginger-mint syrup:

  • Combine the ginger slices, water, and sugar in a small saucepan and bring to a boil. Reduce the heat, cover, and simmer about 20 minutes, adding the mint for the last 10 minutes. Chill, then strain. The syrup keeps in a sealed container in the refrigerator for several days.

To make the cooler:

  • Fill two glasses with ice. In a cocktail shaker add the coconut water, ginger-mint syrup, and Chardonnay if using, along with a little ice. Shake briefly and strain into the prepared glasses. Garnish with a slice of ginger and a sprig of mint, and serve.
