Brat bites are savory little sausage parcels that make an ideal appetizer for tailgates, game days, or Oktoberfest gatherings.
Quick and budget-friendly, this crowd-pleasing snack can be prepared in under an hour for about $10, making it perfect for feeding a group without much fuss.

These brat bites are a regular at Packer tailgates, but they’re just as welcome at any sports gathering or holiday party. They pair nicely with mashed potato croquettes or other handheld sides for a hearty game-day spread.

In Wisconsin, bratwurst — affectionately called “brats” — is woven into local food traditions the way the Green Bay Packers are woven into the culture. Small butcher shops grew into well-known regional producers, and brats have become a go-to item in many home freezers.
On a cold winter day at our cottage near Johnsonville, I pulled a package of brats from the freezer and some leftover phyllo dough from a recent batch of spanakopita. With snow on the ground and no grill in sight, I rolled brat pieces in phyllo, brushed them with butter, and baked them until golden.

The result was exactly what you’d hope for: juicy, flavorful sausage wrapped in a light, crisp phyllo shell. Bite-sized and satisfying, these are easy to serve warm and disappear fast.

These brat bites work with pre-cooked brats or fresh ones you parboil first. Serve them with ketchup, Dijon mustard, or your favorite dipping sauce and they’ll be a hit at any event.

Juicy sausage wrapped in flaky phyllo—simple, portable, and full of flavor. They’re a perfect small bite that captures a little taste of Wisconsin tradition.
