You can easily make a single-serving dessert in your air fryer with a texture that matches oven-baked treats—no more rubbery mug cakes. This Vegan Air Fryer Carrot Cake is perfect to enjoy alone, or you can bake several mugs at once to share.

Thinking of Buying an Air Fryer?
Air fryers come in many sizes and price ranges, but any model that fits a small baking dish will work well for this recipe. If you already have one, you can confidently use it to make this Vegan Air Fryer Carrot Cake for one or several servings.

Did You Know You Can Bake In Your Air Fryer?
An air fryer is essentially a compact convection oven that circulates hot air quickly and evenly. That makes it ideal for baking small mug cakes like this Air Fryer Carrot Cake.
The heating element and fan sit at the top of most units, blowing warm air around the dish to maintain an even temperature and create an evenly baked result.

What Are the Benefits of an Air Fryer?
Aside from producing excellent mug cakes, an air fryer keeps your kitchen cooler than a conventional oven—useful in hot weather. It also makes crisp foods without deep-frying, which is helpful if you prefer less oil or dislike frying at home.
There are many vegan air fryer recipes beyond desserts—from savory snacks to hearty mains—so the appliance can be very versatile.

What Kind of Baking Dishes Can I Use in the Air Fryer?
You can bake in metal mini pans, small Pyrex dishes, silicone molds, pottery, ramekins or mugs—basically any oven-safe container that fits in your air fryer. I often find great options new or used at thrift stores.
Some brands sell pans made specifically for their air fryer models, and accessory sets can be convenient if you plan to bake frequently.

- Make it oil-free by substituting mashed banana or applesauce for the oil.
- Swap walnuts for pecans or omit nuts entirely.
- Use dried cranberries or chopped dates instead of raisins.
- Substitute shredded zucchini or summer squash for the carrots for a different twist.
