These Vegan Cereal Donuts were inspired by a recent trip to a donut shop in West Hartford, CT. They served a strawberry-iced donut topped with cereal, and I loved the contrast of crunchy cereal, sweet icing, and a soft, cake-like donut. I wanted to recreate that combination at home using healthier, plant-based ingredients.

Instead of frying or using highly processed ingredients, I adapted my banana bread-style batter and paired it with One Degree Organics Sprouted Cacao-O’s as the cereal “sprinkles.” This cereal is made from simple, organic ingredients like real cacao and oats, and it adds a satisfying crunch and chocolatey flavor that complements the strawberry icing.

The donut batter is a variation of my banana bread recipe, producing a tender, slightly sweet donut that bakes in a donut pan. The icing is an easy, fresh strawberry glaze made from real strawberries and powdered sugar. Dipping the cooled donuts into the strawberry glaze and finishing them with crunchy sprouted cacao cereal creates a playful and satisfying texture contrast.

Ingredients

Dry Ingredients

  • 1 Cup Whole Wheat Flour
  • 1/2 Cup Rolled Oats
  • 1/2 Tsp Baking Soda
  • 1/2 Tsp Baking Powder

Wet Ingredients

  • 1 Cup Mashed Banana
  • 2 Tbs Almond Milk
  • 3 Tbs Coconut Oil melted
  • 1/4 Cup Maple Syrup
  • 1 Tsp Apple Cider Vinegar
  • 1/2 Tsp Vanilla Extract
  • 1 Tsp Cinnamon
  • 1/4 Tsp Salt

Icing

  • 1 Cup Powdered Organic Sugar
  • 2 Tsp Almond Milk
  • 1 Large Strawberry

Cereal Sprinkles

  • Handful of One Degree Organics Sprouted Cacao O’s

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine the dry ingredients until evenly mixed.
  • In a separate bowl, whisk together the wet ingredients. Try to mash the banana well so there are few chunks.
  • Fold the wet mixture into the dry ingredients and stir until just combined.
  • Divide the batter evenly into a 6-count donut pan and bake for about 15 minutes, until set and lightly golden.
  • Remove the donuts from the oven and let them cool completely before icing.
  • To make the icing, blend the strawberry and almond milk in a blender or food processor until smooth.
  • Sift the powdered sugar into a shallow bowl to remove lumps, then whisk in the strawberry mixture until you have a smooth glaze.
  • Dip the top of each cooled donut into the strawberry icing, then immediately sprinkle with the sprouted cacao cereal so it sticks.
  • Allow the icing to set for a few minutes, then serve.
