Ingredients

  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, cut in half horizontally
  • 1 1/2 teaspoons lemon pepper seasoning
  • 1/2 cup chopped onion
  • 3 garlic cloves, minced
  • 1/3 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup slivered sun-dried tomatoes
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
  • 4 cups baby spinach

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Season the chicken with lemon pepper.
  2. Cook the chicken 4–5 minutes per side, until cooked through. Remove from the skillet and set aside.
  3. Add the chopped onion to the skillet and sauté about 3 minutes until softened.
  4. Add the minced garlic and cook for 1 minute more.
  5. Pour in the chicken broth and scrape up any browned bits from the pan.
  6. Stir in the heavy cream and bring to a gentle simmer for about 1 minute. Add the Parmesan and stir until melted.
  7. Add sun-dried tomatoes, Italian seasoning, and garlic powder. Stir in the spinach and cook until wilted. Return the chicken to the skillet and spoon sauce over it. Season with salt and pepper to taste.
