NO-BAKE ENERGY BITES

These roasted almond coconut bliss balls are simple to make and ready in minutes using a handful of wholesome ingredients. They’re perfect as a healthy fridge-ready snack: sweet, nutty and satisfying without any baking.

They are vegan, gluten-free, grain-free and soy-free.

  • Roasted almonds (see How to roast almonds)
  • Shredded coconut
  • Dates (pitted and soaked)
  • Fine coconut flour
  • Lemon or lime juice
  • Vanilla powder (optional)

HOW TO MAKE IT

SOAK DATES: Place pitted dates in a bowl and cover with water. Let them soak at room temperature for 1–2 hours, or until soft, then drain well.

STEP 1

Place the drained dates in a food processor. Add roasted almonds, shredded coconut, coconut flour, lemon or lime juice and a pinch of vanilla powder, if using.

STEP 2

Process until the mixture holds together when pressed. If you prefer a sweeter result, add a small amount of maple syrup and pulse again.

STEP 3

Scoop and roll the mixture into small balls. Roll each ball in extra shredded coconut for a coated finish.

STEP 4

Enjoy immediately or store the bliss balls in the refrigerator for up to a week. They also freeze well for longer storage.

HOW TO ROAST ALMONDS

Roasting almonds enhances their flavor and texture. Preheat the oven to 180 °C (350 °F). Spread almonds in a single layer on a baking sheet. Roast for 10–15 minutes, stirring or shaking the tray every 5 minutes so they brown evenly. When they are fragrant and lightly browned, remove them from the oven and transfer to a plate to cool.

Ingredients

  

  • 150 g roasted almonds
  • 50 g shredded coconut
  • 150 g dates soaked in water for a couple of hours or until soft
  • 30 g fine ground coconut flour
  • 20 ml lemon or lime juice
  • pinch of vanilla powder optional

Extra (for rolling)

  • 20 g shredded coconut

Instructions

 

  • Drain dates well and place them in a food processor. Add the roasted almonds, shredded coconut, coconut flour, lemon or lime juice, and vanilla powder if desired.
  • Process until the mixture comes together and sticks when pressed. Add a little maple syrup if you’d like it sweeter.
  • Form the mixture into small balls and roll each in extra shredded coconut to coat.
  • Serve right away or refrigerate. Makes approximately 22–24 balls.
