Below is a curated list of my favorite slow cooker brunch casseroles. These recipes save time and simplify your next brunch by letting the slow cooker do the work. Each casserole can be cooked overnight or prepared ahead and reheated. If you don’t have a slow cooker, you can easily bake any of these in the oven instead.

What Size Slow Cooker To Use

The recipes below are written for 12 large eggs, which fits best in a 6-quart slow cooker. If you have a smaller slow cooker (for example, a 3-quart unit), you can cut any recipe in half and follow the same method.

Baking Instructions

All of these casseroles can be baked instead of cooked in a slow cooker. Simply assemble the dish as directed, transfer it to a greased 9×13-inch baking pan, and bake at 350°F for about 50 minutes. Baking times vary by oven and ingredient choices, so check for doneness with a knife inserted in the center — it should come out clean.

Tips For A Successful Breakfast Casserole

Follow these simple tips to ensure your slow cooker breakfast casserole turns out well:

  • Grease the slow cooker thoroughly. A generous coating of cooking spray prevents sticking. You can also line the insert with parchment paper or use a disposable slow cooker liner for easier removal.
  • Allow the casserole to cool completely before removing it from the insert. Cooling helps the casserole set and reduces the chance of it falling apart or sticking.
  • Know your slow cooker. Cooking times differ between models—some finish in 6 hours on low, others take 8. Test for doneness by inserting a knife or toothpick in the center; it should come out clean. My experience is about 6½ hours on low.

Storing & Freezing Your Casserole

These casseroles keep well in the refrigerator for up to 4 days. If you have leftovers beyond that, freeze portions for up to 2 months. Thaw overnight in the refrigerator and reheat in the microwave or oven. For meal prep, cool the casserole completely, then slice and freeze individual portions or freeze the whole casserole if your freezer allows.
