Ingredients
- Matty’s Greek-style Garlic Lemon Chicken seasoning
- 1 1/2 to 2 Pounds Chicken legs and thighs
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp crushed mint
- 1/2 tsp oregano
- 3/4 cup chicken broth
- Juice of 1 lemon (about 1/4 cup)
- 1 Tablespoon low sodium soy sauce
- 2 Tablespoons olive oil
- 3 cloves minced garlic
- Small bunch cilantro
- 1 medium onion, sliced into 1/2 inch rings
Instructions
- Press Sauté on the Instant Pot and set it to High.
- Coat the chicken with the dry spices (salt, pepper, garlic powder, onion powder, mint, oregano). When the Instant Pot displays “Hot,” add the olive oil and brown as many pieces as will fit without crowding—about 4 minutes per side. You may need to brown in two batches. Set browned chicken aside.
- Add the minced garlic to the pot and sauté until fragrant. Pour in the chicken broth, lemon juice and soy sauce to deglaze the pot, scraping up the browned bits with tongs or a spatula.
- Press Cancel to stop the Sauté function.
- Return all the chicken to the pot. Add the cilantro to the liquid and arrange the sliced onion rings on top of the chicken.
- Secure the lid and set the valve to Sealing. Press the Poultry button and adjust the time to 10 minutes at high pressure.
- While the chicken cooks, preheat your broiler to High and place a rack in the middle position. When the cook cycle finishes, perform a quick release. Transfer the chicken to a foil-lined baking sheet and broil about 3 minutes per side until nicely browned.
- While the chicken broils, cancel the Instant Pot and turn Sauté back on to High. Allow the sauce in the pot to reduce for 6–10 minutes until slightly thickened. Remove the chicken from the broiler, spoon the reduced sauce over the pieces and serve hot. Enjoy.
